Corned Beef Hash & Fried Eggs

My first post in months!

I was compelled to post my super easy recipe for Corned Beef Hash & Fried Eggs because I had it for breakfast, lunch, and dinner today.  I absolutely love it and it’s so easy especially with the shortcuts I took.

Recipe Makes 4-6 Servings

1.  Corned Beef  – Minced ( I used 1/4 Lb of sliced deli meat)

2.  1 Medium Onion – Minced

3.  6  – Frozen  Potato Hash Brown Patties ( This is an easy short cut instead of using fresh potatoes.  It’s what I had in my freezer. )

Combine the Minced Corned Beef, Onion, and Hash Brown Patties in large bowl and mix together.  In a frying pan add a Tablespoon on oil and fry the mixture until golden brown.

In a separate frying pan you can make your eggs.  I like to fry my eggs in olive oil so the whites are crispy and the yolk is still runny. The way I make my eggs is in a small frying pan heat up some olive oil then add 2 eggs and cover the pan for 2-3 minutes.  The eggs should be perfect.
