My first post in months!

I was compelled to post my super easy recipe for Corned Beef Hash & Fried Eggs because I had it for breakfast, lunch, and dinner today. I absolutely love it and it’s so easy especially with the shortcuts I took.

Recipe Makes 4-6 Servings

1. Corned Beef – Minced ( I used 1/4 Lb of sliced deli meat)

2. 1 Medium Onion – Minced

3. 6 – Frozen Potato Hash Brown Patties ( This is an easy short cut instead of using fresh potatoes. It’s what I had in my freezer. )

Combine the Minced Corned Beef, Onion, and Hash Brown Patties in large bowl and mix together. In a frying pan add a Tablespoon on oil and fry the mixture until golden brown.

In a separate frying pan you can make your eggs. I like to fry my eggs in olive oil so the whites are crispy and the yolk is still runny. The way I make my eggs is in a small frying pan heat up some olive oil then add 2 eggs and cover the pan for 2-3 minutes. The eggs should be perfect.

Enjoy

In response to some blog posts on Midtown Lunch I wanted to share my awesome pastrami burger recipe. This is really easy and tasty. All you have to do is take some pastrami and put it in a food processor. Then mix the pastrami with your ground meat. You need to eye the proportions to how you like it. I like 1/4 pastramit to ground meat. That’s it. Top of your burger with a few more pieces of BBQ pastrami. You do not need any other seasoning since the pastrami is already seasoned and fatty and salty.

Let me know your comments.

There are 2 ways to make this recipe This first is the way I made it..in about 30 minutes and with very little effort. Then there is the best way to make it nice and slowly all from scratch. For now I am just going to list the easy recipe.

1lb fresh salmon

1 can cream corn

1 package of shitake mushrooms

1 shallot

1 garlic clove

Fresh Rosemary

___________

In a sauce pan combine shitake, garlic, rosemary, and shallot with olive oil. If you like a little spice add red pepper flakes. Cook for 5 minutes then add the canned cream corn and bring to a boil then turn off. ( Total time 10 minutes)

In a medium depth frying pan heat olive oil and sear the salmon fillet until the skin is crispy. ( About 3-4 minutes) Turn fire on low and add the cream corn to the pot and cover for 10-12 minutes.

Salt & Pepper to taste.

2 cloves minced garlic

Next beat 1-2 eggs and coat chicken.

Then coat each piece in flour or corn starch mixed with sesame seeds

Fry in Peanut Oil until golden brown and cooked

I had some time to kill yesterday so I decided to try one of these doughnuts from Starbucks. I’ve heard through numerous people how good these are but never actually tried them. I am also not a Starbucks Evangelist.. just so you know.. I just like good food from wherever I can find it…. I have to say, it was an amazing experience. Probably the best Chocolate Glazed Doughnut I have ever had. I’m not one to care about calories or fat in doughnuts or desserts because that’s usually what makes them so good. The $1.25 cost for this confection t is the perfect price. I think these Doughnuts are made by Top Pot Doughnuts in Seattle

Go try one if you have not already!

While on the Doughnut subject I am really excited to try Tim Horton’s which just came to New York all the way from Canada. I’ve had it once or twice when in Montreal but can not remember anything about it.

By the way Canada.. Specifically Quebec.. When are you going to bring some good Poutine down to New York? Don’t get me wrong you are worth the 6-8 hour drive in normal weather, but would much rather prefer to walk out of my East Village Apartment in my robe ( I do now own a robe) metaphorically speaking.

So every time I make a dinner or cater for a friend all everyone wants is mini hot dogs. I do not understand them. There is no culinary craft to this what so ever! I decided for Hannah’s birthday party to make Hot Dog Sushi as part joke & part deliciousness since Hot Dogs and Sushi are two of her favorite foods.

In all honesty the combination does work. The Smokey saltiness of the hotdog and sweetness of the sushi rice compliment each other very well. Seaweed you can barely taste and sesame seeds are always fun.

1 package of hot dogs

1 package of nori seaweed

Some toasted sesame seeds

2 large orders of sushi rice from your favorite Japanese restaurant or from your local Chinese restaurant ( if you order from a Chinese place you will need to season your rice with seasoned rice wine vinegar) Every time I try making sushi rice it does not come out good so I have resorted to buying a $2 pint of rice and adding my own vinegar.. Cheaper faster less hassle

So grill your hot dogs and roll’em up like regular sushi rolls.

For dipping sauces I recommend.

1. One part store bought hoison sauce to one part ketchup

2. One part Chinese Mustard to one part Miso Paste

Tuesday July 7, I am working on some recipes for a charity BBQ competition this Sunday and wanted to create a burger that’s slightly different and with some bold flavors. Last year’s competition I created a Pastrami Burger that went over really well and was hoping to create something that would live up to it. As I’m sure most food fans are addicted to Food Network you always see Booby Flay cook with Chipotles. So I finally decided to buy some Chipotle in Adobo Sauce. ( Goya Brand. you cant go wrong) I actually searched the web and didn’t really find any good recipes for a Chipotle Burger. This is what I came up with

1 lb ground meat

1 small can chipotle in adobo sauce

1 small bunch of Cilantro

2 pieces of garlic minced

So it was Monday July 6 and I decided I wanted to make a sauce out of fresh blueberries since they were on sale for $1.49 a dry pint in my East Village Key Food. The best part about this sauce was I had most of the ingredients already in fridge and cabinet so it seemed like a great idea for a fresh and different sauce on some chicken breast which I cooked with some fresh rosemary garlic & olive oil in a saute pan

My Recipe for Blueberry BBQ Sauce great for Chicken & Steaks

1 dry pint fresh blueberries

1/4 cup balsamic vinegar

3 tablespoons sugar

3 tablespoons ketchup

3 tablespoons honey

1 garlic clove minced

1 tablespoon fresh minced ginger

2 tablespoons of saricha hot sauce ( add more or less for spice)

1 sprig of fresh rosemary ( to be taken out later on)

salt & pepper to taste

Cook time 15-20 minute

After the blueberries are nice and goey you can puree in blender if you choose.

I eat this with a box of Near East Couscous. You cant go wrong only takes 15 minutes to cook and was $1.49 a box ( when on sale buy a bunch and stock up)
